Gmail, and really any Google product, is spyware. What can one use that is not? Proton Mail is a great open-source alternative. It does not collect personal information, or require any while setting up an account.

Setup

To begin, create an address. Then, create a password. After this is done, the user will be given a string of words which can be used in case one cannot enter the account. Write that down in a safe place, preferably a password notebook. If one attempts to sign up to 3rd party applications, it may flag the account as suspicious and lock it from doing so. To fix this, go to settings and set a recovery email. One can use Temp Mail for this. Then, it must be verified by sending an email to the address given. This will fix that problem. A free plan only covers one account, so if needed, create multiple.
